We present to you our chef Bertrand Gabiron, who, after a journey in different starred establishments (Taillevent, La côte Saint Jacque, Thierry Marx, Castel Novel), settled down in Uzerche in April 2016 where he officiated for more than three years at the 'Hôtel Joyet de Maubec as head chef. Having fallen under the spell of the Pearl of Limousin, and eager to continue its evolution, he joined the establishment in November 2019. His cuisine is contemporary, very light, combining seasonal and local products, and Bertrand is worked by the impetuous desire to satisfy his customers.
